Vegan Ice-Itself Germanish Chocolate Cake



Enough batter for 160-180 sq. in. of cake pan (two 9" squares, 3 8"
rounds, whatever)

Topping (bottoming?):

1.5 c coconut
.75 c chopped/slivered nuts
.5 c brown sugar
.25 c melted margarine
3 T any syrup (maple, corn)
.25 c any milk (rice, oat)

Combine in bottom of cake pan(s)

Cake itself:

3 c flour
2 c sugar
.75 c cocoa
1 t salt
2 t baking soda
dash cinnamon (to bring out chocolate flavor)
2 t vanilla
2 T vinegar
2/3 c oil
2 c some liquid (water, coffee, *milk, ?)

Mix dry ingredients well.  Add wet ingredients and stir till mostly
homogeneous.  Pour over the stuff in cake pan(s).  Bake about 35-45
minutes at 350F.  Perhaps invert somehow while hot and stack layers,
perhaps not.

(Helpful: if you make two 1/3c dents in the dry ingredients and pour
into _that_, there's no oil-measuring cup to wash.)
