Espresso Snowballs / Coffee Mexican-Wedding-Cakes


Inspired by a similar rx in a coffee book from the library, name
escapes me, rx was "Espresso-Hazelnut Russian Wedding Cakes."

1c    chopped nuts
.5c   butter
1T    sugar
2T    confec sugar
1t    vanilla
2T    espresso grinds
1c    flour
.25t+ salt

Cream butter and sugars; add vanilla and ground coffee, then flour,
then nuts.  Form .5"-or-so balls.  Bake .5"+ apart on ungreased
sheets on middle rack at 350F for 15-20 minutes, or till firm and
turning color a bit.

Toss with:

1c  confec sugar
2T  espresso grinds

Repeat after cool.
